Strawberries in Rosewater Syrup

Strawberries in Rosewater Syrup by Mark Wood

Serves: 4
Dietary: Vegan

Ingredients:
500g strawberries
250ml water
50g sugar
2 tbsps rosewater
handful of fresh mint, roughly chopped

Method:
Slice the strawberries or leave them whole.
In a small saucepan heat the water with the sugar, stir and simmer until the sugar has melted and the syrup is beginning to thicken.
Turn off the heat and stir in the rosewater.
Leave to cool and then add the chopped mint and pour over the strawberries.
