Black Rice Pudding

Dietary: vegan and wheat free-contains nuts

Serves:4/6

Ingredients:

200g black glutinous rice

1 litre water

1 vanilla pod

50g soft brown sugar or jaggery

 

150ml coconut milk

1 tbsp white sugar

2 tbsps coconut cream

Toasted coconut to decorate

Method:

Soak the black rice for 12 hours.

Rinse the black rice & place in a saucepan with the water & the vanilla pod. Bring to the boil & then simmer, uncovered for 1 hour or until the rice is soft & all the water has been absorbed. Stir in the sugar & heat through. The rice pudding should be thick & glossy.

To make the coconut cream, heat the coconut milk, coconut cream & sugar together, until the sugar has dissolved.

To serve fill a bowl with warm black rice pudding & top with hot coconut cream, finish with sliced tropical fruit, such as mango, papaya or lychee, or chilli mango slices & sprinkle with toasted coconut.

Tips: Black rice is a glutinous short grain black rice from Asia. You can buy glutinous black rice in Asian Stores.
