Baked Quince

Quinces

 

Serves: 4-6

Dietary: vegan, gluten free

 Ingredients:

4 small quince or 2 large

1 large orange, segments & juice

1 cinnamon stick

2-4 tablespoons soft brown sugar

 

Method:

Pre-heat the oven to 150C/Gas2.

Wash, core, peel and slice the quinces into segments, about 1 cm in depth.

Segment the orange over a bowl so that you catch all the juice.

Lay the quince slices in an oven-proof dish and intersperse with the orange segments. Break the cinnamon stick in two and place between the quince slices.

Drizzle with honey and spoon on the orange juice.

Cover with silver foil and bake until the quinces are tender, about 2 hours, baste once or twice during the cooking to stop the quinces burning. Add more liquid if necessary. The longer you cook them the pinker the quince goes.

Serve warm with vanilla icecream, greek yogurt or thick cream.

Tips: quinces are very hard so take care when cutting.
