Black Rice Pudding

Ambon black rice pudding - V GF

Served with coconut cream and topped with tropical fruit and toasted coconut

Serves: 6
Dietary: Vegan, Gluten Free

Ingredients

  • 200g black glutinous rice
  • 1 litre water
  • 50g soft brown sugar
  • vanilla pod
  • 150ml coconut milk
  • 1 tablespoons soft brown sugar
  • 2 tablespoons coconut cream
  • tropical fruit
  • toasted coconut

Method

  1. Soak the black rice for 12 hours.
  2. Rinse the black rice and place in a saucepan with the water, sugar and the vanilla pod.
  3. Bring to the boil and then simmer, uncovered for 1 hour or until the rice is soft and all the water has been absorbed.
  4. The rice pudding should be thick and glossy.
  5. To make the coconut cream, heat the coconut milk, coconut cream and sugar together, until the sugar has dissolved.
  6. To serve fill a small bowl with warm black rice pudding and top with hot coconut cream.
  7. Finish with sliced tropical fruit, such as mango, papaya or lychees and sprinkle with the toasted coconut.
