Spanish - Andalusian Tapas

Andalusia, the most southerly state of Spain is as large as England with a varied terrain and a Moorish influence. The Moors crossed over into Southern Spain from The Maghreb in AD711 and stayed for 1000 years. They transformed the landscape with an irrigation system and grew oranges, bitter oranges, lemons, quinces, almonds, dates, olives, rice and durum wheat for bread and pasta. They brought with them sweet spices, cumin, cinnamon and saffron.

You will make a selection of tapas, such as almendras picantes, spiced almond, champinones al Jerez, mushrooms cooked in sherry, salmorejo, gazpacho style dip, ensalada de naranjas y pasas, orange & sultana salad, spinach with chickpeas flavoured with saffron, slices of potato tortilla, fried potatoes with a spicy tomato sauce, paella verde. For dessert; Seville orange tart and to drink, organic sherry and organic Spanish wine.
