
Italian - Quick and Easy
Italian cooking is simple. We specialize in 'cucina casalinga' home-style cooking, using the freshest seasonal vegetables, fragrant herbs, generous quantities of extra virgin olive oil and syrupy balsamic vinegar. For this course we have chosen our favourite simplest dishes, we will make quick to make anti pasto and a range of different pasta sauces, but we will still make pasta and make it into ravioli filled with orange squash and wild mushrooms with a sorrel dressing, calzones filled with caramelised onions, spinach & dolcelatte, the creamiest of leek risottos, rich aubergine caponata, pears with walnuts & parmesan.
For desserts you may make a real tirimisu, grilled fresh figs with mascarpone and chocolate and hazelnut cantuccini. We will taste as we cook and finish with a late lunch with organic Italian wine.
