Vegan Gourmet

This is a masterclass designed to show you how to lift your vegan cooking to the next level.

Gourmet and vegan are too often words that aren’t seen together, with vegans offered nothing more than a bowl of beans or highly processed substitute products to imitate “real” food.

Demuths head chef Richard Buckley wants to change this and will teach a special master class showing how vegan food can be defined by what it does use, vegetables, fruits and nuts, instead of by what it doesn’t.

He will show how to use the best quality local produce to create vegan food that emphasises what is best about the vegetables and fruits on offer and how to combine them to create original, exciting dishes that people will talk about for months after.

Drawing on modern and ancient cooking techniques he will show how the new wave Nordic cooks have redefined what it means to cook vegetables and how in modern vegan food people don’t even notice it is vegan.

Dishes will vary with what is available in the fields but it is likely to include salt baked root vegetables, pickles, nut and vegetable purees, beautiful consommé, herb sauces, poached fruits and spicy granitas.

We will finish with a late lunch and organic wine or local juices. A full pack of recipes to take home.
