The New Vegetarian
This course is designed as an introduction to the essentials of vegetarian cookery-for those who are new to being veggie, or people who want to eat less meat and improve their vegetarian repertoire.
Vegetarian cooking does not need to rely on processed meat imitation foods-here at the Vegetarian Cookery School we excel in creating inventive and exciting meals without meat. During this hands on day we will cover how to use seasonal vegetables, fresh herbs and spices and how to create nutritious and delicious dishes with pulses, beans, nuts and grains. Our dishes will come from our restaurant, Demuths, and our cookery books Green World and Green Seasons-the dishes chosen will vary during the year depending on seasonal produce.
Our experienced chef tutors will guide you through the basics of knife skills, bread and pastry making, sauces, cooking techniques and how to cook balanced vegetarian dishes. The day will be filled with tips on what to keep in your store cupboard, what freezes well and how to make simple food colourful, tasty and healthy.
During the day there will be lots of tasting, demonstrations and hands on cooking. We will end the day with a delicious meal which you will have helped to make, accompanied by selected organic wines and fruit juices. You will receive a pack of recipes, tips, store cupboard ideas and advice for you to take away to give you all you need to recreate exciting vegetarian dishes at home.
