Spanish - Andalucian Tapas

Tapas is perfect for parties, lots of small dishes to share, most of which can be made in advance. Serve with ice cold Manzanilla Sherry with its distinctive almost salty taste.

Andalucia, the most southerly state of Spain is as large as England and is one of my favourite regions of Spain. With its Moorish influence and abundant natural produce makes Andalucían cuisine some of the most delicious in Europe.

We will make a selection of Andalucian tapas, to start with a traditional semolina bread & bread sticks, almendras picantes, spiced almonds, patatas bravas, fried potatoes in a  spicy tomato sauce, alioli, the most garlicy mayonnaise, tortilla de patatas, salmorejo, gazpacho style dip, ensalada de naranjas y pasas, orange & sultana salad, garbanzos con espinacas, spinach with chickpeas flavoured with saffron and paella. For dessert tarta de almendras y naranja, a rich almond and orange cake.

We will cook and eat tapas through the day, sample the local manzanilla sherry and finish with a large paella and a glass of Cava.

For each course we choose the recipes that fit the season, depending on time of year and the availability and seasonality of produce. You will receive a pack of all of the recipes we have made during the day so that you can recreate them at home.
