Mexican Evening Workshop

Mexican food is renowned for its abundant use of chillies and spices-we will use a variety of fresh chillies which are grown in Dorset, and also show you how to use spices and herbs to create exciting Mexican dishes at home.

During this class we will make traditional Mexican food including Ancho chillies stuffed with Arroz a la Mexicana, Traditional Corn Tortillas, frijoles Refritos (refried beans), Tequila guacamole and Tomatillo Salsa. You will learn how to identify and use both dried and fresh chillies and also discover traditional Mexican ingredients such as Masa Harina and Tomatillos. We will prepare all of the dishes together with a mixture of demonstrations and some hands on cookery.

During the evening you will be given tasters of the dishes made and a main meal with specially selected organic wine or fruit juice. You will be given a recipe file of all the dishes made so you can recreate them at home.

This evening class runs from 6.30 to 9pm.
