Japanese Master Class Sushi & Shojin
Sachiko Saeki teaches our popular Sushi and Shojin course. She is a professional chef who learnt to cook in her parents sushi restaurant in Japan. She is now a Sushi chef at UMU in London.
Sachiko was on TV showing Hugh Fearnley Whittingstall from River Cottage how to prepare Sushi and Shojin Japanese cooking in his Vegetable TV series on Channel 4.

She is going to teach us how to make perfect Sushi and to cook Shojin Ryori, which is a special way of preparing, cooking and eating for monks at Zen temples.
We will make ROLL-SUSHI Filling with carrot, shitake mushroom and cucumber. Learn how to cook and season sushi rice and how to identify and use the different types of miso and soy sauce. And then make a selection Shojin dishes for example:
GANMODOKI Tofu ball with carrot, edamame beans and arame cooked in stew served with seasonal vegetables
TEMPURA Broad bean and crispy rice pop tempura with maccha salt
GOMA-AE French beans and sesame seeds salad
GOMA-DOFU Sesame paste and soya milk set with kuzu starch served with wasabi shoyu
MISO SHIRU Miso soup with defrosted silken tofu with wakame seaweeds
TSUKE-MONO A quick method of making fresh pickles with seasonal vegetables
GREEN TEA JELLY with AZUKI BEAN Green tea and azuki bean jelly serve with ice cream
We will make and eat throughout the day and finish with a late lunch with Japanese tea and organic wines and juices. You will take home a detailed recipe pack and a selection of Sushi.
