Greek Island Cooking
The cuisine of the Greek Islands is renowned for simple, locally-produced food with lots of fresh herbs. Greek food is perfect for parties as it's simple to make, can be prepared in advance and is often as good hot or cold.
We start with a laden table of Greek traditional ingredients: Feta and halloumi cheeses, filo pastry, vine leaves, chickpeas, almonds and hazelnuts, sesame seeds, pinenuts, grassy olive oil, aubergines, tomatoes, peppers, lemons and bunches of sweet smelling herbs, oregano, mint and parsley.
We always make recipes that fit the season and dishes vary depending on the time of year, but expect dishes such as
- Chunky hummus to go with freshly baked pitta
- Dolmades filled with herby garlic rice
- Saffron and cheese tiropetes
- Greek country beans
- Stuffed aubergines with yoghurt and almond sauce
- Courgette filo pie
- Greek salads
- Apricot and hazelnut baklava dripping in honey.
There will be lots of hands-on cooking and tasting throughout the day, ending with a mezze style lunch with organic Greek wine.
