Italian cooking is simple. We specialize in home-style cooking, using the freshest seasonal vegetables, fragrant herbs, generous quantities of extra virgin olive oil and syrupy balsamic vinegar.

The dishes will vary with the seasons and what local vegetables and fruits we can source. We always make fresh pasta and teach you how to use a pasta machine and all the different shapes and styles of pasta that you can make.

In the Spring you will make fresh pasta filled with ricotta & wild garlic with a sorrel dressing, in the Summer filled with ricotta and basil with a sweet tomato vinaigrette, in the Autumn, with orange squash and wild mushrooms. You will learn how to make sage & rosemary focaccia to eat with our own pesto, calzones filled with caramelised onions, spinach & dolcelatte, the creamiest of risottos and griddled polenta with seasonal grilled vegetables.

For desserts you may make a real tirimisu, individual cherry tarts, grilled fresh figs with mascarpone and chocolate and hazelnut cantuccini.

We will taste as we cook and finish with a late lunch with organic Italian wines.
