Fast and Delicious-Summer

This is one of our most popular courses offering fast, seasonal and easy to make food.

The dishes we will cook will use the best of what is in season and the vegetables we can source locally from our suppliers Eades and Castle Farm, as well as wild foods and our own garden produce. 

In Summer we have a vibrant and delicious array of fresh produce, ripe fruits, fresh herbs and vegetables and we will make a menu of around ten dishes which can all be made in a hurry.

For example we may make Irish Soda Bread with Soupe au Pistou, Feta & Spinach Filo Triangles with wild herb Tzatziki or Sweetcorn fritters, Artichoke Farinata with a Salsa verde, Southern French Stuffed Tomatoes or Pea Mint & Feta Souffle with delicious seasonal salads and to finish White Chocolate, Strawberry and Mint, Rosewater Trifles.

The course involves a mixture of demonstrations, knife skills and hands on cookery in small groups, and is led by our experienced chef tutors who can answer all of your quick cooking questions.

We will also focus on essential and unusual store cupboard ingredients, how to achieve a balanced vegetarian diet and chefs tips to save time and increase your confidence in the kitchen.

We will cook & eat as we go along, with lots of tasting, and finish with a late lunch with organic wine.
