Far Eastern Asian Feast with Sachiko Saeki

We are very lucky to welcome Sachiko Saeki back to the cookery school, a professional chef who learnt to cook in her parents sushi restaurant in Japan and her husband is Chinese. She will be showing us how easy and exciting Japanese & Chinese cuisine can be for vegetarians.

Sachiko will be showing Hugh how to prepare Sushi in his vegetable TV series on Channal 4 on the 6th November.

 The day will cover cooking traditions and techniques, spices and herbs and some of the more unusual ingredients from Asia. We will discuss how the cooking traditions of Southern China & Japan interrelate.

You will get to grips with unusual ingredients and where to source them, learn to identify all the different noodles and how to use them.

You will make sushi, tasty wonton dumplings, find out how to make delicious dishes with tofu and seitan, what to do with seaweed, miso, & wasabi, how to make spicy Sichuan curries and salads. You will learn how to get the best out of your wok, how to stir-fry noodles and make crispy noodles.

We have developed a selection of traditional dishes and meat-free versions of Asian classics on this hands-on day. Much of the cuisine of Far East Asia is also dairy free so this is a great course for vegans. The course will include lots of tasting and trying new flavours and ingredients and will end with a Far East Asian Feast.
